Anyways, I came across this recipe for a cheesy, tator tot chicken bacon casserole that you cook in a slow cooker. I'm not a fan of tator tots, but figured if you cook them in the slow cooker they just come out like potatoes so it has to be good. Plus this recipe had Matt's name written all over it!
I decided to make this while we were rained in during Sandy. It was AMAZING! This could be good for breakfast, lunch or dinner! So good, I had to share.
Here's the recipe:
Ingredients:
- 1 (32 oz.) bag frozen tater tots (if you don't like a lot of potato, a smaller bag like 28 oz. is ok.)
- 1 (3 oz.)bag bacon pieces
- 1-1.25 pound boneless, skinless chicken breasts, diced (I used tenderloins.)
- 2 cups shredded cheddar cheese
- 3/4 cup milk
- Salt & pepper, to taste (I seasoned the chicken before putting in the slow cooker.)
Directions:
- Spray slow cooker with nonstick cooking spray.
- Layer half of the frozen tater tots on the bottom of the slow cooker.
- Sprinkle with 1/3 of the bacon pieces.
- Top with 1/3 of the shredded cheese.
- Add diced chicken on top. Season with salt & pepper.
- Add 1/3 of the bacon pieces and another 1/3 of shredded cheese.
- Put the rest of the frozen tater tots on top.
- Finish with the remaining 1/3 cheddar cheese and remaining 1/3 of bacon pieces.
- Pour 3/4 cup milk all over the top.
- Cover and cook on low about four to six hours. *We have a fairly new slow cooker, but I'm paranoid, so I cooked for five hours. It was perfect. The chicken was so tender and moist!
